Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 and 1/4 cups milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 cup fresh blueberries
  • Butter and syrup for topping

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.

  2. In a separate bowl, whisk together the milk, egg, and vanilla extract.

  3. Gradually stir the wet ingredients into the dry ingredients, stirring until just combined.

  4. Fold in the blueberries gently.

  5. Heat a non-stick griddle or skillet over medium-high heat.

  6. Scoop batter by 1/4 cup and drop onto the griddle.

  7. Cook for 2-3 minutes on each side or until golden brown.

  8. Serve hot with a pat of butter and a drizzle of syrup.
