Ingredients
- 4 fresh mackerel fillets
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 2 tomatoes, chopped
- 2 tsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Coriander leaves for garnish
Instructions

Clean and wash the mackerel fillets, remove the skin and cut into small pieces.

In a pan, heat the vegetable oil over medium heat.

Add onions, garlic, ginger, and green chilies, sauté for 2-3 minutes.

Add tomatoes and cook until soft.

Add curry powder, turmeric powder, cumin powder, coriander powder, and salt, mix well.

Add coconut milk and bring it to boil.

Add the mackerel pieces and simmer for 10-12 minutes or until cooked.

Garnish with coriander leaves and serve hot with steamed rice.
