This flavorful dish with tender fish cooked in aromatic spices soaked in a creamy coconut sauce is perfect for a quick and delicious meal.

Ingredients

  • 4 white fish fillets (halibut or cod)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 2 tbsp of curry powder
  • 1 tsp of ground cumin
  • 1 tsp of ground coriander
  • 1 tsp of paprika
  • 1 can of diced tomatoes
  • 1 cup of coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Turn on the Instant Pot and set to sauté mode. Add a tablespoon of oil and the diced onion. Sauté for 2 minutes until softened.

  2. Add red bell pepper and minced garlic. Cook for another 2 minutes.

  3. Add in all the spices and stir to combine. Pour in diced tomatoes and give a quick stir.

  4. Lay the fish fillets on top. Season with salt and pepper.

  5. Pour in coconut milk. Give everything a good stir.

  6. Close the lid and turn the valve to sealing position. Cook on high pressure for 3 minutes.

  7. Once done, carefully release the pressure using the quick release button. Open the lid and give everything a good stir.

  8. Spoon the curry into bowls and serve hot with steamed rice. Garnish with chopped cilantro.
