How To Make Instant Pot Fish Curry Recipe
This flavorful dish with tender fish cooked in aromatic spices soaked in a creamy coconut sauce is perfect for a quick and delicious meal.

Ingredients
- 4 white fish fillets (halibut or cod)
- 1 onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2 tbsp of curry powder
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1 tsp of paprika
- 1 can of diced tomatoes
- 1 cup of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Turn on the Instant Pot and set to sauté mode. Add a tablespoon of oil and the diced onion. Sauté for 2 minutes until softened.

Add red bell pepper and minced garlic. Cook for another 2 minutes.

Add in all the spices and stir to combine. Pour in diced tomatoes and give a quick stir.

Lay the fish fillets on top. Season with salt and pepper.

Pour in coconut milk. Give everything a good stir.

Close the lid and turn the valve to sealing position. Cook on high pressure for 3 minutes.

Once done, carefully release the pressure using the quick release button. Open the lid and give everything a good stir.

Spoon the curry into bowls and serve hot with steamed rice. Garnish with chopped cilantro.
