Ingredients

  • 2 fresh mackerel fillets, cooked and flaked
  • 4 cups mixed greens
  • 1/2 red onion, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, red onion, parsley, and mint.

  2. In a separate bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

  3. Add the flaked mackerel to the bowl of greens, and drizzle with the lemon dressing.

  4. Toss the salad gently until all the ingredients are well combined.

  5. Serve and enjoy!
