How To Make Indonesian Fried Rice with Mackerel

Ingredients

  • 300g mackerel fillets, cooked and flaked
  • 4 cups cooked rice, preferably day-old
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (terasi)
  • 4 eggs, fried sunny-side up
  • Spring onions, chopped, for garnish

Instructions

  1. In a wok or large frying pan, heat the vegetable oil over medium heat. Add the minced garlic, shallots, and red chilies, and sauté until fragrant.

  2. Add the shrimp paste and stir-fry for another minute.

  3. Increase the heat to high and add the cooked rice. Stir-fry the rice for a few minutes until heated through and well coated with the aromatics.

  4. Add the flaked mackerel, soy sauce, oyster sauce, and sweet soy sauce. Stir-fry for a few more minutes until all the ingredients are well combined and heated through.

  5. Remove from heat and serve the fried rice hot, topped with a fried egg and chopped spring onions.
