How To Make Thai Mackerel & Sweet Potato Traybake

Ingredients
- 4 mackerel fillets
- 2 sweet potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 tablespoons of Thai red curry paste
- 1 tablespoon of fish sauce
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- 1 tablespoon of vegetable oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the Thai red curry paste, fish sauce, soy sauce, honey, minced garlic, and grated ginger.

Place the mackerel fillets in a shallow dish and pour the marinade over them. Let them marinate for 10 minutes.

In a large baking tray, toss the cubed sweet potatoes, sliced bell pepper, and onion with the vegetable oil. Season with salt and pepper.

Remove the mackerel fillets from the marinade and place them on top of the sweet potato mixture.

Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the mackerel is cooked through.

Garnish with fresh cilantro before serving.
