  • 4 mackerel fillets
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp grated ginger
  • Juice of 1 lemon
  • Fresh coriander, for garnish

Instructions

  1. In a small bowl, mix together the curry powder, turmeric powder, cumin powder, coriander powder, paprika, salt, and black pepper.

  2. Rub the spice mixture onto the mackerel fillets, ensuring they are evenly coated. Let it marinate for 10 minutes.

  3. Heat the vegetable oil in a skillet over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onions are translucent.

  4. Place the marinated mackerel fillets in the skillet and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

  5. Squeeze the lemon juice over the cooked fish.

  6. Serve the mackerel hot, garnished with fresh coriander.
