How To Make Instant Pot Vegetable Pulao Recipe

Delicious vegetable pulao made with basmati rice, vegetables and fragrant spices in an instant pot.

Serves:

Ingredients

  • 2 cups basmati rice, rinsed and drained
  • 1 onion, finely chopped
  • 1 cup mixed vegetables (carrots, peas, beans, corn)
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 bay leaf
  • 2 cardamom pods
  • 2 cloves
  • 1 cinnamon stick
  • 2 tbsp ghee
  • 3 cups water
  • salt, to taste

Instructions

  1. Press the ‘Sauté’ button on the Instant Pot and add ghee.

  2. Once the ghee is hot, add bay leaf, cardamom pods, cloves and cinnamon stick. Fry for a few seconds.

  3. Add onions, garlic and ginger. Sauté until onions become translucent.

  4. Add mixed vegetables and rice, fry for a minute.

  5. Pour water and add salt.

  6. Put the lid on, close the vent and cook under high pressure for 5 minutes.

  7. Once the cooking is complete, allow the pressure to release naturally for 10 minutes.

  8. Open the vent and release any remaining pressure.

  9. Serve hot with raita or yogurt.
