How To Make Instant Pot Vegetable Pulao Recipe
Delicious vegetable pulao made with basmati rice, vegetables and fragrant spices in an instant pot.
Serves:
Ingredients
- 2 cups basmati rice, rinsed and drained
- 1 onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, beans, corn)
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 bay leaf
- 2 cardamom pods
- 2 cloves
- 1 cinnamon stick
- 2 tbsp ghee
- 3 cups water
- salt, to taste
Instructions

Press the ‘Sauté’ button on the Instant Pot and add ghee.

Once the ghee is hot, add bay leaf, cardamom pods, cloves and cinnamon stick. Fry for a few seconds.

Add onions, garlic and ginger. Sauté until onions become translucent.

Add mixed vegetables and rice, fry for a minute.

Pour water and add salt.

Put the lid on, close the vent and cook under high pressure for 5 minutes.

Once the cooking is complete, allow the pressure to release naturally for 10 minutes.

Open the vent and release any remaining pressure.

Serve hot with raita or yogurt.
