  • 4 mackerel fillets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Caper Sauce:
  • 2 tbsp capers, drained and rinsed
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp Dijon mustard
  • 2 tbsp chopped parsley

Instructions

  1. Preheat the oven to 400°F.

  2. In a small bowl, mix together the caper sauce ingredients and set aside.

  3. Season the mackerel fillets with salt and pepper.

  4. Heat the olive oil in a skillet over medium-high heat.

  5. Sear the mackerel fillets for 1-2 minutes per side until golden brown.

  6. Transfer the fillets to a baking dish and top each fillet with a spoonful of caper sauce.
