  • 3 eggs, beaten
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 ½ cups evaporated milk , or cream
  • 2 ½ cups peaches, canned, sliced
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • Almond extract, few drops
  • 1 ½ cups rice, cooked


  1. Beat eggs, sugar and salt well in a bowl. Add milk and syrup drained from peaches.

  2. Cook in a double boiler until the mixture coats a spoon, stirring frequently. Remove from heat.

  3. Add spices and almond extract. Combine with peaches and rice.

  4. Chill and serve.
