Peach bread pudding made with brioche bread is fantastic and actually feels a lot lighter than your usual bread pudding. It’s also a perfect dessert recipe to serve at potlucks; we like ours a la mode!

Ingredients
- 3 eggs, separated
- 2 cups heavy cream, hot
- 6 Brioche slices, day old, cut into cubes
- 1 cup peaches, diced (or peach pie filling, if desired)
- 2 tsp cinnamon
- ½ cup sugar
- whipped cream, for topping
Instructions
- Preheat your oven to 350 degrees F.
- Soak cubed brioche bread in the hot cream.
- Mix the yolks with the sugar until they form a cream.
- In another bowl, beat the whites of the eggs until they form stiff peaks.
- Fold gently into the bread and cream with the remaining ingredients.
- Transfer in a greased 8 x12 baking dish for 45 minutes or until hot throughout.
- Serve warm and top with whipped cream if desired.
