How To Make Sweet Potato Carrot Cake

A simple and versatile base cake recipe for carrots or sweet potatoes – or both! Whichever you'd prefer would still certainly be scrumptious with this wonderful recipe for moist and decadent dessert cake.

Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 tsp vanilla
  • 3 cups carrots , or sweet potatoes (grated)
  • 1 ½ cups oil
  • 2 tsp salt
  • 4 eggs
  • 2 tsp soda
  • 1 ½ tsp cinnamon

Instructions

  1. Sift flour, soda, salt and cinnamon.
  2. Add sugar and oil.
  3. Beat eggs and add to mixture.
  4. Add carrots or sweet potatoes.
  5. Bake at 350 degrees F for 40 minutes.
