Ingredients
- 1 lb herring fillets
- 1 red onion, thinly sliced
- 1/2 cup sugar
- 1 cup white vinegar
- 1/2 cup water
- 1 tsp allspice berries
- 1 tsp coriander seeds
- 1 tsp mustard seeds

Rinse and pat dry herring fillets.

In a saucepan, combine sugar, white vinegar, and water. Heat over medium heat until sugar is dissolved.

Let the mixture cool to room temperature.

Layer herring fillets and sliced onions in a glass jar or container with a tight-fitting lid.

Add allspice berries, coriander seeds, and mustard seeds to the container.

Pour cooled vinegar mixture over the herring and onions, making sure everything is submerged.
