Ingredients

  • 1 lb herring fillets
  • 1 red onion, thinly sliced
  • 1/2 cup sugar
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tsp allspice berries
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds

Instructions

  1. Rinse and pat dry herring fillets.

  2. In a saucepan, combine sugar, white vinegar, and water. Heat over medium heat until sugar is dissolved.

  3. Let the mixture cool to room temperature.

  4. Layer herring fillets and sliced onions in a glass jar or container with a tight-fitting lid.

  5. Add allspice berries, coriander seeds, and mustard seeds to the container.

  6. Pour cooled vinegar mixture over the herring and onions, making sure everything is submerged.

  7. Close the lid tightly and let sit in the refrigerator for at least 24 hours before serving.
