How To Make Swedish Fish Stew

A savory, tomato-based stew loaded with tender fish and vegetables, topped with Swedish herbs.

Ingredients

  • 1 lb white fish fillets, diced
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp Swedish seasoning
  • Salt and pepper, to taste
  • 3 cups fish or vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.

  3. Add diced tomatoes and broth. Bring to a boil.

  4. Add diced fish and Swedish seasoning. Simmer for 15-20 minutes, or until fish is cooked through.

  5. Season with salt and pepper to taste.

  6. Serve hot with a sprinkle of fresh herbs (optional).
