Ingredients

  • 8 pickled herring fillets
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1/2 onion, thinly sliced
  • 2 dill pickles, thinly sliced
  • 4 toothpicks

Instructions

  1. In a small saucepan, combine white vinegar and sugar. Heat until sugar dissolves.

  2. Place herring fillets on a plate and top each with a slice of onion and dill pickle.

  3. Roll up tightly and secure with a toothpick.

  4. Place rollmops in a shallow dish and pour vinegar mixture over them.

  5. Cover and refrigerate for at least 4 hours before serving.
