Ingredients

  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup low-fat milk
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • for the sauce:
  • 2 cups low-sodium beef broth
  • 1/4 cup all-purpose flour
  • 1/4 cup reduced-fat sour cream
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, parsley, milk, nutmeg, allspice, salt, and black pepper. Mix well until all ingredients are evenly distributed.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.

  4. In the same skillet, whisk together beef broth and flour until smooth. Cook over medium heat, stirring constantly, until the mixture thickens.

  5. Reduce heat to low and add sour cream. Stir until well combined.

  6. Return the meatballs to the skillet and simmer in the sauce for 15-20 minutes, or until cooked through.

  7. Season with salt and pepper to taste.

  8. Serve the meatballs with the sauce and garnish with chopped parsley, if desired.
