Ingredients

  • 2 small cucumbers, sliced
  • 1 small red onion, sliced
  • 2 fillets of smoked herring, flaked
  • 3 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together apple cider vinegar, honey, olive oil, salt, and black pepper.

  2. In a large bowl, combine sliced cucumbers, sliced red onion, and flaked smoked herring.

  3. Pour the dressing over the salad and toss gently.

  4. Serve chilled.
