Ingredients

  • 2 apples, peeled and chopped
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9 inch cake pan.

  2. In a bowl, mix together the flour, baking powder, cinnamon, and cardamom.

  3. In another bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs and vanilla extract.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Fold in the chopped apples.

  7. Pour the batter into the prepared cake pan and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack and letting it cool completely.

  9. Cut into slices and serve.
