Ingredients

  • 2 cups spinach leaves
  • 200 grams paneer, cubed
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1/4 cup heavy cream
  • Fresh coriander leaves for garnish

Instructions

  1. Blanch the spinach leaves in boiling water for 2 minutes. Drain and immediately transfer to ice cold water. Drain again and blend into a smooth paste. Set aside.

  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.

  3. Add ginger-garlic paste and cook for a minute. Then, add turmeric powder, coriander powder, and garam masala. Mix well.

  4. Add the spinach puree to the pan and mix everything together. Cook for 5 minutes, stirring occasionally.

  5. Add the cubed paneer and salt. Mix gently to coat the paneer with the spinach mixture. Cook for another 5 minutes.

  6. Stir in the heavy cream and cook for a few more minutes until the paneer is cooked through.

  7. Garnish with fresh coriander leaves and serve hot with naan or rice.
