How To Make Herby Paneer Baked Rice

Ingredients
- 2 cups basmati rice
- 200g paneer, cubed
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 cup mixed herbs (coriander, mint, basil), chopped
- Salt to taste
- 2 tbsp oil
- 3 cups water
Instructions

Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat oil in a large pan and add cumin seeds. Once they splutter, add the chopped onions, garlic, and ginger. Sauté until the onions turn golden brown.

Add the pureed tomatoes, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes, until the oil separates from the masala.

Add the paneer cubes and mixed herbs to the masala. Cook for 2 minutes, allowing the flavors to blend together.

Add the soaked and drained rice to the pan. Mix well to coat the rice with the masala.

Transfer the mixture to a greased baking dish and spread it evenly.

Preheat the oven to 350°F (175°C).

Bring the water to a boil and pour it over the rice mixture in the baking dish. Cover the dish with aluminum foil.

Bake for 30 minutes, or until the rice is cooked and the flavors are well absorbed.

Remove the foil, fluff the rice with a fork, and garnish with additional herbs if desired.
