How To Make Irish Lamb Stew Recipe

Ingredients
- 1.5 lbs lamb stew meat, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and cubed
- 4 cups beef or vegetable broth
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the lamb stew meat and cook until browned on all sides. Remove the meat and set aside.

In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

Return the browned lamb stew meat to the pot. Add the sliced carrots, cubed potatoes, beef or vegetable broth, bay leaves, dried thyme, salt, and pepper. Stir well to combine.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.

Remove the bay leaves from the stew before serving. Garnish with chopped fresh parsley.
