Ingredients

  • 6 large Jersey fresh tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of dried basil
  • 1/4 teaspoon of dried thyme
  • 1/4 teaspoon of dried parsley

Instructions

  1. Bring a large pot of water to a boil. Score the bottoms of the tomatoes with an “X” and blanch them in the boiling water for 30 seconds.

  2. Remove the tomatoes from the boiling water and immediately place them in a bowl of ice water to cool. Peel off the skins and chop the tomatoes into chunks.

  3. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until softened.

  4. Add the chopped tomatoes, sugar, salt, black pepper, dried oregano, dried basil, dried thyme, and dried parsley to the saucepan. Stir to combine.

  5. Reduce the heat to low and simmer the stewed tomatoes for 45 minutes, stirring occasionally.

  6. Serve the Jersey fresh stewed tomatoes hot as a side dish or use them as a base for pasta sauce or other recipes.
