Just Like Le Peeps’s French Toast Pancakes Recipe

No Midwest road-trip would be complete without a meal from Le Peep but we can’t always be on the road. Make their French toast pancakes at home and fall in love with autumn for breakfast!

How To Make French Toast Pancakes

  • 1 cup whole wheat flour
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon (divided)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 egg (beaten)
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup milk

To Serve:

  • Maple syrup
  1. Preheat a large skillet over medium heat.
  2. In a medium bowl, sift & whisk together the flour, sugar,1 tsp cinnamon, baking powder, baking soda, and salt.
  3. In a small bowl, mix the buttermilk, egg, oil, and vanilla. Combine the wet ingredients with the dry ones and whisk until a slightly lumpy mixture is formed.
  4. Pour ½ cup batter onto the heated skillet and cook one side until bubbles rise and a thick dough is formed. Then flip and do the same with the other side. Plate the entire pancake when it becomes cooked enough. Repeat this process until you have the necessary amount of portions.
  5. Set the pancakes aside to cool. In a shallow dish, whisk together the two eggs, 1/2 cup milk, and remaining ground cinnamon.
  6. Coat each pancake in the mixture and transfer it back to the grill and cook for two more minutes on each side. Serve it with maple syrup and enjoy!
