  • 8 large eggs
  • 1/4 cup of milk
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 1 cup of fresh baby spinach leaves
  • 1/2 cup of crumbled feta cheese
  • 1 tbsp of olive oil
  • Chopped fresh parsley or chives for garnish (optional)

Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  2. Heat the olive oil in a large nonstick skillet over medium heat.

  3. Add the spinach and cook for 2-3 minutes until wilted.

  4. Add the egg mixture into the skillet and stir constantly with a spatula until the eggs are scrambled and cooked through, approximately 5-7 minutes.

  5. Sprinkle the scrambled eggs with crumbled feta cheese, and garnish with chopped fresh parsley or chives if desired.
