How To Make Spinach and Feta Breakfast Sandwich
A flavorful and protein-packed breakfast sandwich with spinach and feta cheese.

Ingredients
- 4 English muffins
- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat oven to 350°F.

Cut English muffins in half and place them on a baking sheet, cut side up. Toast them in the oven until lightly browned, about 5 minutes.

In a pan, heat olive oil over medium heat. Add spinach and cook until wilted, about 2 minutes.

In a bowl, whisk eggs and season with salt and pepper. Pour into the same pan as spinach and scramble until fully cooked.

Add the feta cheese to the pan and stir until melted.

Assemble the sandwich by placing the egg mixture on the bottom half of the English muffin, and top with the toasted top half.

Serve immediately and enjoy!
