Ingredients

  • 1/4 cup olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 10 oz fresh spinach
  • 1 cup crumbled feta cheese
  • 2 cups breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté for 3-5 minutes until softened.

  3. Add spinach and cook until wilted, about 2-3 minutes.

  4. Remove from heat and stir in feta cheese, breadcrumbs, eggs, salt, and pepper until fully combined.

  5. Transfer mixture to a greased 9×9 inch baking dish.

  6. Bake in preheated oven for 30-40 minutes, or until golden brown on top.
