How To Make Veggie Omelette
A healthy and delicious omelette filled with fresh vegetables.
Serves:
Ingredients
- 8 eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 1/2 cup spinach, chopped
- 1/2 cup shredded cheese
Instructions

In a mixing bowl, whisk eggs, milk, salt and pepper until well combined.

Heat olive oil in a non-stick pan over medium heat.

Add onions, bell pepper, mushrooms and spinach and cook until vegetables are tender.

Pour the egg mixture evenly over the vegetables in the pan.

Sprinkle shredded cheese on top of the egg mixture.

Cover and cook for 5 minutes or until the eggs are set and cooked through.

Slide the omelette onto a serving platter and cut into wedges to serve.
