Ingredients

  • 1 pound ground venison
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Shredded cheese, chopped green onions, and sour cream for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the venison and cook until browned, breaking it up with a spoon.

  2. Add the onion, garlic, and jalapeno pepper to the pot. Cook until the onion is translucent, about 5 minutes.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, salt, and black pepper. Bring to a simmer.

  4. Reduce the heat to low and cover the pot. Let it simmer for 2 hours, stirring occasionally.

  5. Serve hot, garnished with shredded cheese, chopped green onions, and sour cream if desired.
