  • 3cloves garlic,smashed
  • 1tbspolive oil
  • ½largeonion,finely chopped
  • 1cupcarrots,finely chopped
  • ½cupchicken stock,fat-free
  • fresh basil

  1. Saute garlic in oil, add onions and carrots and saute on medium-low for about 2 to 3 minutes, until soft.

  2. Add tomatoes and chicken broth and simmer for 45 minutes on low. Add fresh basil in the last 10 minutes.

  3. Taste for acidity, if sauce is a bit tangy or acidic, then add 1 tablespoon of sugar.

  4. Serve over pasta and enjoy.

Recipe Notes

The reason for adding basil at the end of cooking is because herbs will become bitter if cooked for more than 20 minutes. If the sauce is too acidic, a calorie-free way to cut the acidity would be to add ½ teaspoon of baking soda.
