Ingredients

  • 1.5 pounds of baby potatoes, halved
  • 2 tablespoons of olive oil
  • 1 tablespoon of sea salt
  • 1 tablespoon of fresh rosemary, chopped

Instructions

  1. Place the halved baby potatoes in a pot of salted water and bring to a boil. Cook for 5 minutes, then drain.

  2. In a large skillet, heat the olive oil over medium-high heat. Add the parboiled potatoes and cook for 10-15 minutes, stirring occasionally, until golden brown and crispy.

  3. Sprinkle the sea salt and fresh rosemary over the potatoes, and continue to cook for an additional 2 minutes, until fragrant.

  4. Remove from heat and serve immediately.
