Serves:

Ingredients

  • 1 cup lentils, cooked
  • 1 onion, diced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper, to taste
  • 2 cups mashed potatoes

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, sauté the diced onion, carrots, and garlic until they are tender.

  3. Add the cooked lentils, vegetable broth, thyme, rosemary, salt, and pepper to the skillet. Stir well and let simmer for 10 minutes.

  4. Divide the lentil mixture into 4 small ramekins.

  5. Top each ramekin with a generous layer of mashed potatoes.

  6. Place the ramekins on a baking sheet and bake in the preheated oven for 20 minutes, or until the mashed potatoes are golden and crispy on top.

  7. Serve hot and enjoy!
