How To Make Chicken Souvlaki

Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized chunks
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 pita breads
- Tzatziki sauce, for serving (optional)
- Chopped fresh parsley, for garnish
Instructions

In a bowl, combine the olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, paprika, salt, and pepper.

Add the chicken chunks to the marinade and toss to coat. Allow it to marinate for at least 30 minutes, or up to overnight in the refrigerator.

Preheat your grill to medium-high heat.

Thread the marinated chicken onto skewers.

Grill the chicken skewers for about 10 minutes, turning occasionally, until cooked through and slightly charred.

Remove the chicken from the skewers and transfer to a serving plate.

Warm the pita breads on the grill for a minute on each side.

Serve the chicken souvlaki on the warm pita breads, topped with tzatziki sauce if desired. Garnish with chopped fresh parsley.
