How To Make Lentil Bolognese

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 1 cup dried lentils
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese, for serving
  • Cooked spaghetti or your choice of pasta, for serving

Instructions

  1. Rinse the lentils under cold water and drain.

  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

  3. Add the lentils, crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and pepper to the pot. Stir well to combine.

  4. Bring the mixture to a boil, then reduce heat to low and simmer covered for 45 minutes to 1 hour, or until the lentils are tender and the sauce has thickened.

  5. Serve the lentil bolognese over cooked spaghetti, and sprinkle with grated Parmesan cheese.
