How To Make Lentil Bolognese

Ingredients
- 1 cup dried lentils
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese, for serving
- Cooked spaghetti or your choice of pasta, for serving
Instructions

Rinse the lentils under cold water and drain.

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

Add the lentils, crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and pepper to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce heat to low and simmer covered for 45 minutes to 1 hour, or until the lentils are tender and the sauce has thickened.

Serve the lentil bolognese over cooked spaghetti, and sprinkle with grated Parmesan cheese.
