How To Make Lamb & Potato Bake

Ingredients

  • 500g lamb shoulder, cut into chunks
  • 4 large potatoes, peeled and sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 2 sprigs of rosemary
  • 2 cups of beef or vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Heat the olive oil in a large ovenproof casserole dish and brown the lamb on all sides. Remove from the dish and set aside.

  3. In the same dish, sauté the onions and garlic until softened.

  4. Layer the sliced potatoes in the dish, alternating with the lamb. Season each layer with salt, pepper, and rosemary leaves.

  5. Pour the broth over the lamb and potatoes, making sure they are fully submerged.

  6. Cover the dish with a lid or foil and bake in the preheated oven for 1 hour.

  7. Remove the lid or foil and bake for an additional 30 minutes, or until the potatoes are golden and the lamb is tender and cooked through.

  8. Serve hot and enjoy!
