Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and diced
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground ginger
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

  2. Add the carrots, lentils, vegetable broth, cumin, turmeric, and ginger to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the lentils and carrots are tender.

  3. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches until smooth.

  4. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
