How To Make Navarin of Lamb & Spring Vegetables

Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 potatoes, cut into cubes
- 1 cup green peas
- 1 cup baby turnips, quartered
- 2 cups chicken or vegetable broth
- 1 cup red wine
- 2 sprigs of fresh thyme
- 2 sprigs of fresh rosemary
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Sauté until fragrant and translucent.

Add the carrots, potatoes, green peas, and baby turnips to the pot. Stir and cook for a few minutes.

Return the lamb to the pot and pour in the chicken or vegetable broth and red wine. Add the fresh thyme and rosemary sprigs. Season with salt and pepper.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2 hours, or until the lamb is tender and the vegetables are cooked through.

Remove the thyme and rosemary sprigs before serving. Taste and adjust the seasoning if needed.
