How To Make Easy Pressure Cooker Pot Roast

Ingredients
- 2 lb beef chuck roast
- 1 onion, diced
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and quartered
- 3 cloves of garlic, minced
- 1 cup beef broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions

Season the beef roast with salt and pepper.

Set your pressure cooker to sauté mode and sear the roast on all sides until browned. Remove the roast and set aside.

Add the diced onion to the pressure cooker and sauté until translucent. Add the minced garlic and sauté for another minute.

Add the beef broth, dried thyme, and dried rosemary to the pressure cooker. Stir well.

Place the seared roast back into the pressure cooker, along with the carrots and potatoes.

Close the pressure cooker lid and set the valve to sealing position.

Cook on high pressure for 60 minutes.

Once the cooking time is done, allow the pressure to release naturally for 15 minutes, then manually release any remaining pressure.

Open the lid and transfer the pot roast to a serving platter.

Serve the pot roast with the cooked carrots, potatoes, and a ladle of the flavorful cooking liquid.
