How To Make New Potato and Green Bean Salad Recipe
A light and refreshing salad with tender potatoes and crispy green beans tossed in a tangy vinaigrette.
Serves:
Ingredients
- 1 pound new potatoes, halved
- 8 ounces green beans, trimmed
- 1/4 cup red onion, finely chopped
- 2 tablespoons parsley, chopped
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions

Bring a large pot of salted water to a boil.

Add halved new potatoes to the pot and cook for 10-12 minutes, or until tender.

Remove potatoes with a slotted spoon and transfer to a large mixing bowl.

Add trimmed green beans to the same pot of boiling water and cook for 2 minutes, or until tender-crisp.

Drain and transfer to the mixing bowl with the potatoes.

Add finely chopped red onion and parsley.

In a small bowl, whisk together mustard, apple cider vinegar, olive oil, salt, and pepper.

Drizzle the vinaigrette over the potato and green bean mixture and toss to coat. Serve at room temperature.
