How To Make Creamy Green Bean & Potato Casserole

A potato casserole that's generously smothered with sharp cheedar cheese. It's baked for 25 minutes until the cheese just melts into the dish.

  • 4 large potatoes (peeled)
  • 32 oz green beans
  • 10 oz cream of mushroom soup
  • 6 oz mushrooms (sliced and drained)
  • 1 cup cheddar cheese (shredded)
  • ½ cup milk
  • 4 tsp salt (divided)
  • 2 tsp black pepper (divided)
  1. Preheat oven to 350 degrees F.
  2. Spray a 9-by-9-inch baking dish with cooking spray.

  3. Boil peeled potatoes until tender.
  4. Cut potatoes into 1-inch cubes.
  5. Sprinkle with 2 tsp salt and 1 ts. pepper. Set aside.

  6. In a large mixing bowl, add green beans, cream of mushroom soup, mushrooms, milk, ½ cup cheddar cheese, remaining salt and pepper. Mix well.

  7. Fold in potatoes and ½ cup cheddar cheese.

  8. Pour in prepared pan.
  9. Bake for 25 minutes.
  10. Sprinkle remaining cheese and bake for 5 more minutes.
