Ingredients
- 1 lb (450g) pork tenderloin
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 eggs, beaten
- 2 tbsp olive oil
Instructions

Preheat the oven to 425°F (220°C).

In a mixing bowl, combine the breadcrumbs, Parmesan cheese, parsley, garlic, salt, and black pepper.

Dip the pork tenderloin in the beaten eggs, then roll it in the breadcrumb mixture, pressing firmly to coat.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the coated pork tenderloin in the skillet and sear for 2-3 minutes on each side, until golden brown.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Remove from the oven and let the pork rest for 5 minutes before slicing.
