How To Make Turnip and Spinach Frittata Recipe
This frittata is loaded with earthy flavors from turnips and spinach and packed with protein.

Ingredients
- 6 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium turnip, peeled and thinly sliced
- 4 cups fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese
Instructions

Preheat oven to 375°F.

In a large bowl, whisk together eggs, salt, and black pepper.

In a 10-inch ovenproof skillet, heat olive oil over medium-high heat.

Add turnips and cook until just soft, about 5 minutes.

Add spinach and cook until wilted, about 2 minutes.

Pour egg mixture over vegetables in skillet and sprinkle with Parmesan cheese.

Cook on medium heat until edges are set, about 5 minutes.

Place skillet in oven and bake until frittata is set and golden brown on top, about 15-20 minutes.
