How To Make Turnip and Spinach Frittata Recipe

This frittata is loaded with earthy flavors from turnips and spinach and packed with protein.

Ingredients

  • 6 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium turnip, peeled and thinly sliced
  • 4 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, whisk together eggs, salt, and black pepper.

  3. In a 10-inch ovenproof skillet, heat olive oil over medium-high heat.

  4. Add turnips and cook until just soft, about 5 minutes.

  5. Add spinach and cook until wilted, about 2 minutes.

  6. Pour egg mixture over vegetables in skillet and sprinkle with Parmesan cheese.

  7. Cook on medium heat until edges are set, about 5 minutes.

  8. Place skillet in oven and bake until frittata is set and golden brown on top, about 15-20 minutes.

  9. Let cool for a few minutes before slicing and serving.
