Ingredients

  • 6 eggs
  • 1 cup chopped mixed vegetables (such as onions, bell peppers, spinach)
  • 1/2 cup chopped cilantro
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt
  • 2 tbsp oil

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, whisk the eggs.

  3. Add the chopped vegetables, cilantro, turmeric powder, red chili powder, garam masala, and salt to the bowl. Mix well.

  4. Heat oil in a skillet over medium heat. Pour the egg mixture into the skillet and cook for 3-4 minutes until the edges start to set.

  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the frittata is set and golden brown.

  6. Remove from the oven and let it cool for a few minutes. Cut into wedges and serve hot.
