How To Make Spinach & Courgette Frittata

Ingredients
- 6 eggs
- 1 courgette, sliced
- 2 cups of fresh spinach leaves
- 1/2 onion, chopped
- 1 clove of garlic, minced
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1/2 cup of grated cheese (such as Cheddar or Parmesan)
- 2 tbsp of olive oil
Instructions

Preheat the oven to 180°C (350°F).

Heat the olive oil in a frying pan over medium heat.

Add the chopped onion and minced garlic to the pan and sauté until fragrant.

Add the sliced courgette to the pan and cook until softened.

Add the spinach leaves to the pan and cook until wilted.

In a separate bowl, whisk the eggs with salt and black pepper.

Pour the whisked eggs into the frying pan and stir to combine with the vegetables.

Sprinkle the grated cheese evenly over the top of the frittata.

Transfer the frying pan to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden brown on top.

Remove from the oven and let it cool slightly before slicing and serving.
