How To Make Turnip and Lentil Curry

A hearty and flavorful curry made with turnips and lentils, perfect for a vegetarian dinner or lunch.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 large turnip, peeled and diced
  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • salt and pepper to taste
  • chopped cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and sauté for 5 minutes, until softened.

  3. Add garlic and ginger and sauté for 1 minute.

  4. Add turnip, lentils, vegetable broth, turmeric, cumin, coriander, salt, and pepper.

  5. Bring to a boil, then lower heat and simmer for 30 minutes, until lentils and turnip are tender.

  6. Serve hot, garnished with chopped cilantro.
