How To Make Turnip and Lentil Curry
A hearty and flavorful curry made with turnips and lentils, perfect for a vegetarian dinner or lunch.
Serves:
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon grated ginger
- 1 large turnip, peeled and diced
- 1 cup red lentils
- 2 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt and pepper to taste
- chopped cilantro for garnish (optional)
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and sauté for 5 minutes, until softened.

Add garlic and ginger and sauté for 1 minute.

Add turnip, lentils, vegetable broth, turmeric, cumin, coriander, salt, and pepper.

Bring to a boil, then lower heat and simmer for 30 minutes, until lentils and turnip are tender.

Serve hot, garnished with chopped cilantro.
