How To Make Chickpea Flour Frittata Recipe

A healthy alternative to traditional frittatas, made with gluten-free chickpea flour and packed with protein.

Ingredients

  • 1 cup chickpea flour
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/4 cup water
  • 2 tbsp olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a bowl, whisk together chickpea flour, nutritional yeast, garlic powder, oregano, salt, pepper, and water until well combined.

  3. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and red bell pepper and sauté until softened, about 5 minutes.

  4. Add spinach to the skillet and cook until wilted.

  5. Pour the chickpea flour mixture into the skillet and cook for 5 minutes, stirring occasionally, until the edges start to set.

  6. Transfer the skillet to the oven and bake for 10-12 minutes, or until the frittata is cooked through.

  7. Remove from oven and let cool for a few minutes before slicing and serving.
