How To Make Turnip and Carrot Soup Recipe
A hearty and healthy soup made with turnips and carrots, perfect for the cooler months.
Serves:
Ingredients
- 4 cups of turnips, peeled and chopped
- 2 cups of carrots, peeled and chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 tsp of dried thyme
- Salt and pepper to taste
- 2 tbsp of olive oil
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onions and garlic and cook until the onions are translucent.

Add the chopped turnips, carrots, thyme, and vegetable broth.

Bring to a boil, then reduce the heat and simmer for 25-30 minutes or until the vegetables are tender.

Let the soup cool for a few minutes, then blend until smooth using an immersion blender or transfer to a blender and puree until smooth.

Season with salt and pepper to taste.
