How To Make Turnip and Carrot Soup Recipe

A hearty and healthy soup made with turnips and carrots, perfect for the cooler months.

Serves:

Ingredients

  • 4 cups of turnips, peeled and chopped
  • 2 cups of carrots, peeled and chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 tsp of dried thyme
  • Salt and pepper to taste
  • 2 tbsp of olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onions and garlic and cook until the onions are translucent.

  3. Add the chopped turnips, carrots, thyme, and vegetable broth.

  4. Bring to a boil, then reduce the heat and simmer for 25-30 minutes or until the vegetables are tender.

  5. Let the soup cool for a few minutes, then blend until smooth using an immersion blender or transfer to a blender and puree until smooth.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
