  • 200g vermicelli noodles
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, thinly sliced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Cook the vermicelli noodles according to package instructions. Drain and set aside.

  2. In a large pot, heat vegetable oil over medium heat. Add onion and garlic, sauté until fragrant and translucent.

  3. Add carrot and bell pepper, cook for another 2 minutes.

  4. Pour in vegetable broth, soy sauce, and sesame oil. Bring to a boil, then reduce heat and simmer for 10 minutes.

  5. Season with salt and pepper to taste.

  6. Divide the cooked vermicelli noodles among serving bowls. Ladle the soup over the noodles.

  7. Garnish with fresh cilantro or green onions.
