Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup vodka
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste
  • 1 lb pasta of your choice, cooked according to package instructions

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  2. Add the vodka to the skillet and cook for another 2 minutes, allowing the alcohol to evaporate.

  3. Stir in the crushed tomatoes and bring the mixture to a simmer. Cook for 15 minutes, stirring occasionally.

  4. Remove the skillet from the heat and stir in the heavy cream, Parmesan cheese, and basil. Season with salt and pepper to taste.

  5. Serve the vodka sauce over cooked pasta and garnish with extra Parmesan cheese and basil, if desired.
