
How To Make Flan Patissier (French Custard Pie)

Ingredients
- 1 sheet of ready-made shortcrust pastry
- 4 cups of milk
- 4 large eggs
- 1/2 cup of granulated sugar
- 1/4 cup of cornstarch
- 1 teaspoon of vanilla extract
- Pinch of salt

Preheat your oven to 350°F (175°C) and grease a 9-inch (23 cm) pie dish.

Roll out the shortcrust pastry and line the greased pie dish with it. Trim any excess pastry.

In a saucepan, heat the milk over medium heat until it reaches a simmer. Remove from heat and set aside.

In a separate mixing bowl, whisk together the eggs, sugar, cornstarch, vanilla extract, and salt until well combined.

Slowly pour the warm milk into the egg mixture, whisking continuously to prevent curdling.

Once fully combined, transfer the custard mixture back to the saucepan and cook over low heat, stirring constantly, until it thickens to a pudding-like consistency. This should take about 5-7 minutes.

Pour the custard into the prepared pastry shell and smooth the surface with a spatula.

Bake in the preheated oven for 30-35 minutes or until the custard is set and the pastry is golden brown.
