Ingredients

  • 8 oz vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 1 cup bean sprouts
  • 1 cup chopped fresh herbs (such as cilantro, mint, and basil)
  • 1/2 cup chopped peanuts
  • 1/4 cup lime juice
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp honey
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil

Instructions

  1. Cook the vermicelli noodles according to package instructions. Drain and rinse with cold water to stop cooking.

  2. In a large bowl, combine the carrots, cucumbers, bean sprouts, herbs, and peanuts.

  3. In a small bowl, whisk together the lime juice, soy sauce, fish sauce, honey, garlic, ginger, and vegetable oil to make the dressing.

  4. Add the cooked vermicelli noodles to the vegetable mixture and toss with the dressing until well coated.

  5. Serve the vermicelli noodle bowl chilled or at room temperature.
